Ingredients:
4 cups packed basil leaves
5 cloves garlic
½ cup butter
2 cups parmesan cheese
olive oil
a handful of pine nuts or walnuts
Recipe:
Put first four ingredients into bowl of food processor in order given: mash as many basil leaves in as you can, just as long as you leave a few inches of space at the top of the bowl, then add garlic, slice up the butter on top, and dump the cheese on top of that. Pulse and gradually add olive oil until mixture is the consistency of thick paste. (Taste at this point and see if it needs more of anything.) Add nuts and continue to blend. Once done, spoon into jars and keep in fridge until ready to enjoy. Yields about two cups.
White Chocolatechip Brownies
Ingredients:
3/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cup cocoa, unsweetened
1 cup white chocolate chips or chunks
3/4 cup chopped walnuts or pecans
1 cup sugar
Preperation:
Make the mix:
In a 1-quart canning jar, layer the flour, salt, and baking powder. Using a wide-mouth canning funnel makes this a little easier. Add cocoa and shake the jar just slightly to level the layer. Now add the white chocolate chips then the walnuts or pecans. Put the 1 cup of sugar in a small food storage bag; seal or tie well then shape into a small enough shape to fit into top of jar. Press the sugar bag into the top of the jar.

Take bag of sugar from the top of the canning jar and pour into a mixing bowl. Add 1 stick (4 ounces) softened butter; beat until light. Beat in 2 eggs and 1 teaspoon vanilla until creamy. Empty the rest of the jar into the mixing bowl. Stir with a wooden spoon until dry ingredients are well moistened. Mixture will be stiff. Spread brownie batter into prepared pan and bake for 20 to 25 minutes, until brownies are set. Cool in pan before cutting into squares.
Blonde Brownies
Ingredients:
1 cup flour
1/4 tsp baking powder
1/8 tsp baking soda
pinch salt
1 cup brown sugar, packed
3/4 to 1 cup chopped pecans or walnuts
1 cup (about 8 ounces) semisweet chocolate chips
Preparation:

Add half ot the brown sugar, then half of the nuts and half of the chocolate chips. Repeat layers with remaining brown sugar, chocolate chips, and nuts.

Blonde Brownie Mix
1 stick butter or margarine (4 ounces), room temperature1 teaspoon vanilla
1 egg
Preheat oven to 350°.
Grease and flour an 7- x 11-inch or 8-inch square baking pan.
Melt 1 stick (4 ounces) butter; let cool slightly. In a mixing bowl, whisk together 1 egg, the melted butter, and 1 teaspoon vanilla. Add contents of the canning jar and mix with a wooden spoon until well blended. All dry ingredients should be moistened.
Spread batter in prepared baking pan. Bake for 20 to 25 minutes.
NIGHTCAP COFFEE MIX
2/3 c Non dairy coffee creamer
1/3 c Instant coffee granules
1/3 c Granulated sugar
1 ts Ground cardamom
1/2 ts Ground cinnamon
Combine all ingredients in a medium bowl; stir until well blended.
Store in airtight container. Yields 1 1/3 cups coffee mix
Instructions for Gift Tag:spoon 1 heaping tablespoon coffee mix into 8 ounces hot water. stir
until well blended.
SPICED MOCHA COFFEE
Ingredients:1/3 c Instant coffee
1/2 c Cocoa powder
1/2 c Nonfat dry milk
1 ts Ground cinnamon
2 ts Dried orange peel
Instructions for Gift Tag:1 tb Mix
6 oz Boiling water
Top with shaved chocolate or cinnamon
CAPPUCCINO COFFEE MIXIngredients :1/2 c. Instant coffee granules
1/2 tsp. Grated dried orange peel
1 c. Non-dairy powdered coffee creamer
1/4 c. Granulated sugar
1/2 tsp. Ground cinnamon
Preparation:Finely grind coffee and orange peel in a blender or food
processor. Add remaining ingredients and process until well
blended. Store in an airtight container.
Instructions for gift tags:
Stir 2 or more teaspoons of coffee mix into 6 ounce hot water.
Yields about 1 2/3 cups mix.
MINTED COFFEE-COCOA MIX
Ingredients:1 1/2 c. non-dairy creamer
1 c. sugar
1/2 c. instant coffee
1/2 c. cocoa
Dash of salt
1/2 tsp. dry peppermint extract
Preparation :Mix all ingredients except extract. Stir to remove lumps. Add
extract and mix well. Seal in airtight container.
Instructions for Gift Tags:
Mix 2-3 heaping teaspoons per cup of water. Heat water and then add mix.
